If it is a quality hand built guitar using high quality wood that is well maintained, yes, it will probably sound better over time; as the wood dries completely and remaining resins crystallize, the wood becomes harder & more resonant.

Gb&a,Yamaha fender are some good brands and it also depends what suits you the best so go to a good guitar shop like raj musicals, Bhatia's etc and get a hold of it and you can decide what's good for you.
